Birthday Cherry Crumble

When I was little my Mom would always make me cherry cheese breeze for dessert. I wanted to recreate that magic for my 25th birthday! I made this dish a couple weeks ago as a yummy treat for the kids’ lunch. My body digests seeds much better than nuts. So, I used seeds in this recipe. You could use pecans, walnuts, almonds or cashews in the same ratios.

Like my berry tart, this recipe has no added sugar and would serve well for a breakfast or lunch treat. I added a dollop or whole raw yogurt to the kids’ bowls for another little protein and probiotic boost. This was instead of ice cream. 🙂

INGREDIENTS:

3 cups of frozen whole pitted cherries (partially thawed) (make sure there is no added sugar, just fruit)

1/2 cup raw sunflower seeds

1/2 cup raw pumpkin seeds

1/4 cup coconut manna

3 Tbsp coconut flour

1/2 cup pitted dates

1 Tbsp cinnamon

RECIPE:

Preheat the oven to 350 degrees. Partially thaw the cherries and add to a small glass baking dish. Mine was 9×6 inches. Next, grind the seeds, flour, manna, dates and cinnamon in a high speed blender like a vitamix. Grind it down until it becomes a fine crumble. Pour the crumble on top of the cherries. Cover all with foil and pop in the oven for 50 minutes. Remove the foil and bake for 10 more minutes.

I only had one #1 candle in the house :). So, that is what we used!

The picture does not do it justice! It’s such a simple but delicious recipe. It is satisfying, won’t leave you feeling stuffed or craving more. It is also really great as leftovers!

SOURCING TIPS:

Check Costco for a great selection of high quality organic frozen fruit. I also purchase the organic dried dates at Costco. I use Thrive Market for great prices on long lasting add ins like coconut manna and coconut flour. This recipe will do great without the flour or manna if you don’t have them on hand.
