Cacao pancakes with coconut flour and gelatin (Grain Free)

Friday marked the end of Cameron and William’s first week of first grade. I thought we would celebrate with a super yummy breakfast treat. So, I took our typical pancake recipe and added a twist.

I doubled this recipe and made 35 pancakes. They freeze really well and it will save me some cleanup later.

CACAO PANCAKE RECIPE

1/2 cup coconut flour

1/4 cup cacao powder

2 Tbsp gelatin (from grass fed cows)

8 eggs, beaten well

1 cup coconut milk* (canned, without added ingredients)

1 Tbsp pure vanilla extract

  1. Preheat an electric griddle or cast iron skillet over medium high heat.
  2. Add the flour, cacao powder and gelatin to a large bowl , stir to mix thoroughly.
  3. Beat the eggs, vanilla and coconut milk together.
  4. Add the eggs, vanilla and coconut milk to the flour mix and stir until just combined.
  5. Drop 1/4 cup portions onto a preheated griddle or skillet. Once you start to see little bubbles it’s time to flip the pancakes. On my electric griddle, it takes about 3-4 minutes per side.

* The best price on canned coconut milk is Trader Joe’s. All three of their coconut milks, light, regular and cream are excellent quality.

So, I did not want to stop there! I had to take it up one more notch…

I made a sort of magic shell drizzle. I did not measure any of the ingredients so these are estimated amounts.

CACAO DRIZZLE

1/4 cup coconut oil*

2 Tbsp cacao powder

1 Tbsp coconut manna

1 Tbsp pure maple syrup**

*I purchase my Organic coconut oil and Organic pure maple syrup from Costco.

Simply, melt the coconut oil and coconut manna in the microwave until soft. Then add the cacao powder and maple syrup. Stir to combine.


NOW TO ASSEMBLE!

I used Costco brand frozen strawberries for the berry topping. I thawed them overnight and sliced them thin. To layer the pancakes, add a couple sliced berries, a small drizzle chocolate and then another pancake.

The final stack was four pancakes. I finished the top with some hemp seed “sprinkles”.

There you have it a grain free, refined sugar free “chocolate” pancake stack complete with homemade “magic shell”. Awesome, I know!! The beautiful thing is that the kids love it and know how good it is for them.
